Ingredients (yields 6-8 shareable servings)
Churro Bun
- 6 Large eggs
- 1/4 C Cinnamon Sugar
- 2 C of Half & Half
- 6 Churro Buns (slacked at room temp)
- Neapolitan Ice Cream
- Whipped Cream
- Powdered Sugar
- Fresh berries and mint for garnish
Preparation
- Pre heat oven and fryer to 360°F
- Place churros on parchment lined pan and bake for 5-6 minutes
- Whisk together eggs, cinnamon sugar, and half & half in a mixing bowl until completely incorporated
- Remove churro buns from oven and allow to cool
- Soak churros in egg mixture for 60-90 seconds
- Place soaked churros in fryer and fry 45-60 seconds per side
- Place churro in bowl and top with scoops of ice cream
- Dust generously with powdered sugar
- Garnish with whipped cream, berries, and mint
- Serve immediately
